Et de relever, \u00e9galement, que pour cette foire internationale, qui a vu la participation de pr\u00e8s de 2700 exposants en provenance de plus d\u2019une cinquantaine de pays, la Tunisie s\u2019est surtout concentr\u00e9e sur la promotion de son huile d\u2019olive extra-vierge \u2013 puisque plus de la moiti\u00e9 des exposants tunisiens ont repr\u00e9sent\u00e9 cette industrie \u00abqui existe dans ce pays depuis l\u2019\u00e9poque romaine\u00bb, pr\u00e9cise la journaliste du <em>\u2018\u2018NYT\u2019\u2019<\/em>.<\/p>\n<p><em>\u00abCe secteur d\u2019activit\u00e9,<\/em> poursuit Florence Fabricant,<em> a connu, ces derniers temps, une mutation d\u2019importance: l\u2019ol\u00e9iculture en Tunisie est pass\u00e9e au palier sup\u00e9rieur d\u2019une industrie qui \u00e9coule un produit haut de gamme sur les march\u00e9s europ\u00e9en et am\u00e9ricain.\u00bb<\/em><\/p>\n<p>La journaliste pr\u00e9cise encore : <em>\u00abBien que l\u2019huile d\u2019olive extra-vierge tunisienne continue d\u2019\u00eatre export\u00e9e en vrac en Europe, pour \u2018divers brassages anonymes\u2019 avec d\u2019autres huiles, il semble que les r\u00e8gles internationales de la production ol\u00e9icole et les normes de l\u2019\u00e9tiquetage et de la certification de l\u2019huile d\u2019olive extra-vierge, ont invers\u00e9 cette tendance. Ainsi, 100% de l\u2019huile d\u2019olive mise en bouteille \u00e9tiquet\u00e9e tunisienne est de fait produite en Tunisie.\u00bb<\/em><\/p>\n<p><strong>Plus l\u00e9g\u00e8re, plus douce et moins poivr\u00e9e<\/strong><\/p>\n<p>Florence Fabricant passe aussi en revue les diff\u00e9rentes qualit\u00e9s de l\u2019huile d\u2019olive extra-vierge tunisienne, mettant l\u2019accent sur le fait que, compar\u00e9e aux huiles europ\u00e9ennes, celles tunisiennes sont <em>\u00abplus l\u00e9g\u00e8res, plus douces et moins poivr\u00e9es.\u00bb<\/em><\/p>\n<p>La journaliste du <em>\u2018\u2018New York Times\u2019\u2019<\/em> s\u2019attarde sur quelques marques d\u2019huile d\u2019olive tunisienne pr\u00e9cise et conseille certaines utilisations.<\/p>\n<p><em>\u00abPar exemple,<\/em> \u00e9crit-elle, <em>la Terra Delyssa est particuli\u00e8rement douce et fruit\u00e9e, avec un soup\u00e7on d\u2019amertume en arri\u00e8re-go\u00fbt \u2013 \u00e0 utiliser, de pr\u00e9f\u00e9rence, pour vos vinaigrettes. L\u2019Olivi Chemlali de Djerba est plus l\u00e9g\u00e8re et peut-\u00eatre m\u00eame plus d\u00e9licate.
