Pourtant c\u2019est une tradition n\u00e9cessaire pour d\u00e9velopper le m\u00e9tier. Il y a quelques ann\u00e9es, le concours du meilleur cuisinier organis\u00e9 en marge du Salon international de l\u2019h\u00f4tellerie et de la restauration (Siher) faisait merveille en la mati\u00e8re. Beaucoup de chefs prim\u00e9s ont eu leur moment de gloire et, gr\u00e2ce \u00e0 ce prix dot\u00e9 de prix, ont pu participer \u00e0 des concours internationaux.<\/p>\n<p>C\u2019est donc avec int\u00e9r\u00eat que nous avons d\u00e9couvert la deuxi\u00e8me session du jeune concours national organis\u00e9 par et \u00e0 l\u2019Institut maghr\u00e9bin de management et de tourisme (IMMT) intitul\u00e9 (un brin pompeusement) La Fourchette d\u2019Or et destin\u00e9 aux jeunes \u00e9tudiants des instituts de cuisine.<\/p>\n<p>Dans les locaux de l\u2019IMMT de la la zone industrielle Charguia 2, au nord de Tunis, Mounir El- Arem, pr\u00e9sident de l\u2019Acad\u00e9mie nationale de cuisine, r\u00e9gion Tunisie et ex\u00e9cutif chef, en ma\u00eetre de c\u00e9r\u00e9monie, dirige les man\u0153uvres du concours.<\/p>\n<p>Le th\u00e8me de l\u2019\u00e9preuve est \u00ab<em>l\u2019innovation de la tarte sucr\u00e9e<\/em>\u00bb au rayon p\u00e2tisserie et les \u00ab<em>p\u00e2tes et produits de la mer<\/em>\u00bb dans la cat\u00e9gorie cuisine.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-95459\" src=\"http:\/\/kapitalis.com\/tunisie\/wp-content\/uploads\/2017\/05\/Le-jury.jpg\" alt=\"Le Jury\" width=\"500\" height=\"281\" \/><\/p>\n<p style=\"text-align: center;\"><em>Le jury au travail.\u00a0<\/em><\/p>\n<p>Le concours s\u2019est d\u00e9roul\u00e9 dans des conditions correctes, hormis un retard ennuyeux. Les jur\u00e9s sont tri\u00e9s sur le volet; quelques-uns parmi eux sont de notori\u00e9t\u00e9 internationale. La directrice de l\u2019IMMT a mis les petits plats dans les grands pour r\u00e9ussir ce concours et Mounir El Arem a fait le reste.<\/p>\n<p>La Fourchette d\u2019or a ouvert ses portes pour cette session \u00e0 la p\u00e2tisserie, les jeunes filles sont venues en nombre important et ont rempli leur mission \u00e0 merveille puisque, aussi bien dans l\u2019une des disciplines comme dans l\u2019autre, elles ont r\u00e9colt\u00e9 les deux meilleurs prix.<\/p>\n<p>Tous les participants ont re\u00e7u les f\u00e9licitations du jury qui a estim\u00e9 que c\u2019est \u00abune session riche en cr\u00e9ativit\u00e9\u00bb. Les prix sont r\u00e9partis comme suit.<\/p>\n<p><em><strong>A\u00a0l\u2019<\/strong><strong>\u00e9preuve p\u00e2tisserie<\/strong> <\/em>Sarra Dhaouadi (IMMT) a remport\u00e9 le Premier prix avec sa cr\u00e9ation <em>\u00abGlamour\u00bb<\/em>.<\/p>\n<p>2e Prix Mohamed Ashraf Z\u00e2anouni (IMM) pour sa cr\u00e9ation <em>\u00abEtincelles fruit\u00e9es\u00bb<\/em>.<\/p>\n<p>3e Prix Soumaya Seddiki (Centre de formation h\u00f4teli\u00e8re de Tabarka, ATFP), pour sa cr\u00e9ation de la <em>\u00abTarte Zgougou avec pralin\u00e9 pistache noisette\u00bb<\/em>.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-95460\" src=\"http:\/\/kapitalis.com\/tunisie\/wp-content\/uploads\/2017\/05\/Zeineb-ben-Henda-premier-Prix-de-cuisine.jpg\" alt=\"Zeineb Ben Henda, premier prix de cuisine.\" width=\"500\" height=\"281\" \/><\/p>\n<p style=\"text-align: center;\"><em>Zeineb Ben Henda, premier prix de cuisine.<\/em><\/p>\n<p><em><strong>A l\u2019<\/strong><strong>\u00e9preuve de cuisine<\/strong><\/em> Zeineb Ben Henda (Ecole h\u00f4teli\u00e8re de Hammamet, ONTT) a d\u00e9croch\u00e9 le Premier prix, \u00e0 l\u2019arrach\u00e9 selon la d\u00e9claration des jur\u00e9s (1 point et demi de plus sur le 2e candidat sur 300 points) avec sa cr\u00e9ation <em>\u00abLasagne de mer en deux cuissons\u00bb<\/em> (entr\u00e9e) et <em>\u00abMhamsa fa\u00e7on sushi\u00bb<\/em>.<\/p>\n<p>2e Prix Nasredine Bezzine (Centre de formation et d\u2019apprentissage d\u2019Ezzouhour &#8211; candidat ATFP) pour sa <em>\u00abtarte au saumon\u00bb<\/em> en entr\u00e9e et <em>\u00abMhamsa \u00e0 l\u2019encre de seiche revisit\u00e9e\u00bb<\/em> en suite.<\/p>\n<p>3e Prix Karim Ouertani du Centre de Formation sectorielle en technique h\u00f4teli\u00e8re de Hammamet- candidat ATFP pour sa cr\u00e9ation <em>\u00abMille feuille de mer\u00bb<\/em> en entr\u00e9e et <em>\u00abHlalem djerbienne au crabe et aux hu\u00eetres\u00bb<\/em> en plat.<\/p>\n<p><strong>Et les produits r\u00e9gionaux ?<\/strong><\/p>\n<p>Ce que nous avons remarqu\u00e9 au cours de la pr\u00e9sentation et la description des plats, sans en avoir go\u00fbt\u00e9, c\u2019est que beaucoup de candidats ont fait une confusion manifeste, confondant qualit\u00e9, aloi et sp\u00e9cificit\u00e9 du produit avec sa noblesse en terme de prix et de sa valeur sur les march\u00e9, de sa chert\u00e9. Aussi, ont-ils fait le choix d\u2019utiliser du crabe, de la langoustine, des crevettes \u00e0 volont\u00e9, ignorant un \u00e9l\u00e9ment essentiel appel\u00e9 dans le jargon <em>cost food<\/em> ou prix \u00e0 l\u2019unit\u00e9.<\/p>\n<p>La seconde remarque se rapporte au m\u00e9lange parfois inadapt\u00e9 des produits et l\u2019usage de produits \u00e0 la mode tel que l\u2019encre de seiche.<br \/>\nPar ailleurs, on n\u2019a pas vu ni distingu\u00e9 les produits r\u00e9gionaux.
